Our first day out on snowshoes, today. Azure skies and 18" of sugar. We stopped for lunch and shared a hydroflask of hot dark chocolate I made this morning. It was as wonderful as the day. I want to start carrying some soups winter backpacking to use for lunches. It makes a huge difference when the winds stinging your face all morning to set up a wind break and have a cup of something hot. I looked at Knorr soup, but they have MSG and a whole bunch of other acronyms , suffixes, prefixes, and weird science. I was hoping to skip cans or liquids. Any ideas, favorites, thoughts, appreciated.

Just remember that when cooking most rice or millet noodles, the water boils first, add noodles and then let them steep for the recommended time, not sitting too long or they turn to a pile of mush or boil them into glue. Takes a little practice but they can be pretty good.

The Tortilla Soup from Packit Gourmet is awesome. The Tuscan Beef Stew and Gumbo are heartier stews and also very good. Haven't tried their Poblano Corn Chowder, but I've never had anything from Packit Gourmet that wasn't excellent.

That's gold. I'll be trying some of those. I have really taken to having a "soup course" before dinner when backpacking--helps with hydration, and also with filling us up (enough I could maybe shrink some of my dinners a hair).

I like to use Pho Cubes as a base or as a hot broth.

Thanks, Ohm. I should order some, as the tomato and other soups call for chicken broth, too. I can't believe the choices I got out of this thread. Ask and ye shall receive.

I find the Pho cubes add more flavor to 'chicken' soup meals over a bullion. There is, also, beef Pho cubes. Do not get the plastic jars of chicken or beef for backpacking. The jars, yummie, are for making a large quantity of Pho for home use.

The interesting thing is that using ingredients like Nido and olive oil adds quite a bit of caloric punch per oz. . As Rebercca said, the extra hydration doesn't hurt. I would also think soups are not nearly as fussy about rehydrating as solid meals. You know, those meals that are still crunchy as frozen mud in the cozy when the sun goes down and the wind begins to howl. Nothing like wrapping your hands around a cup of soup on a cold winter evening. Yep, may expand soup use into dinner. I seem to recall pulling lots of cans of soup out of my Jansport D2 back in the 70's and 80's, but that may be a flashback or a repressed memory of torture.....

My wife's favorite is split pea I love split pea soup, but my wife doesn't enjoy sleeping with me after I eat it. I can only imagine what this would be like in a tent...
