There was a thread on dehydrated/freeze dried veggie suppliers, but I couldn't find it. Other than Harmony House, what are some other suppliers?

Glad to know about these companies. I use Packit Gourmet, which has a pretty impressive assortment of veggies. Including okra!

Dutchware is another source for either FD or dehydrated veggies, and sometimes cheese.

I buy from Augason Farms, just know that they tend to be in stock on Amazon, but not on their own site. I use things from Frontier Co-op as well (this is who supplies most bulk bins, they do a select number of dried vegetables. Amazon sells them as well, I happen to have created a "buying club" with them for local people, so I can get the pound bags cheap.

Hey! sarbar , was hoping you would post up. How are you doing? I ended up buying a few small packages from Harmony. I plan to use them for cooking at home. Being single, there are times when I just don't need a whole veggie, and hate to throw away unused portions of fresh veggies that are starting to rot in the fridge. For now it will be an experiment in buying fresh versus dried.

I am about to order another 1 lb bag of FD Spinach (and other stuff) from North Bay. A small handful added to a bowl of Ramen noodles makes them much better. I used to also throw in some FD cubed chicken but for a while you couldn't get it and now its pretty pricey. It is very nice to have shelf stable spinach for adding into things.

For now it will be an experiment in buying fresh versus dried. I do that for celery often. Where I just need a bit, for soup, but not enough to keep it fresh - and then it goes bad. Btw, if you have an Instapot, dried vegetables cook in it perfectly if you are making soup or stew!

For now it will be an experiment in buying fresh versus dried. My approach with that is to pull out the dehydrator and dry the extra, though I admit I don’t always get to it in time. And I need to keep those dried things like celery handy and use them at home, rather than saving them all for backpacking food—because I never get them all used that way.

Some things dehydrate well. Some things, like strawberries, are best when freeze dried.
I have never tried drying celery. If we had a bigger kitchen I would be drying more. I have looked into a freeze dryer but they are very expensive and a lot of maintenance work.

Celery does dry really well, and fast I might add. One tip though, dice it up, so it rehydrates fast.
