Packit Gourmet's ramen rescue works really well. Seems pricey, but turns a simple. cheap food into a healthy meal. +1, I love Ramen Rescue. Yes, pricey, but so damned easy, and so good.

I don't know about Ramen Rescue, but I use brown rice ramen noodles as a basis for most of my noodle dishes, since they don't need to be boiled. I add many interesting things to said noodles, including many of the veggies I dry myself

Okay. Received the stuff From Harmony. My main motive is for omelets and sprucing up ramen. Or other dishes that just require bit of veggies. Mushrooms, onions, leeks, celery, tomatoes, bell pepper mix. I think it will work well.
My dehydrator got tossed in my last move from SoCal, so this seems like a good solution.

*summer camp did it to me, but i think that stuff was dehydrated circa 1960

Dehydrating your own meals are pretty easy. Highly suggest Looking up Sarbar's site. We've learned to make some absolutely good as home meals that you really look forward to at the end of the day. Some of the freeze dried veggies thrown in Idahoan potatoes with some olive oil and pre cooked bacon is darn good. The meals from Packit Gourmet are tasty if you want pre-made. Some of the Mountain House are pretty good, too. I try to watch my salt, so making my own, storing it in the freezer in gallon ziplocks, gives me about a safe week or so in the pack, maybe more. I add very little salt to my own recipes. I've dehydrated rice, beans, peppers and onions. Added cheese powder, a chicken pouch, salsa in a packet, rolled in a tortilla. Not bad for a trail burrito.

I think most of the repercussions come from not letting the food hydrate adequately. I’ve learned patience. With my home-made “minute” brown rice, I need to let the freezer bag sit for at least 15 minutes, better 20. If I can manage that, things go well

I won't lie: I have had plenty of stomach issues with dried food over the years. But I also eat a lot more than most of it, especially with doing recipe development. And here is my thoughts.... It must be adequately rehydrated. This is an area I see with people writing recipes "Add 1.5 cups water to 1 cup stuffing mix and 1 cup mashed potatoes".....that is so little water. So someone sees that, does it and is "OMG my gut hurts" because your stomach is trying to chew it. Or worse....really hard vegetables and beans, not properly rehydrated. Again, your stomach does the chewing for you. So over the years I can tell you what takes forever to come back: green beans and corn.
Freeze dried food comes back a lot better these days - better job with it.
However....a lack of fat and fiber can cause issues. So that is why most recipes I make have a packet of oil added, to avoid bloat and constipation.

So over the years I can tell you what takes forever to come back: green beans and corn. I would add peas to that list. I can never get those things to rehydrate.

I’ve been using the “Just Veggies” peas, beans, and corn for quite a while now, just because the home-dried versions pretty much remain rock-hard nuggets unless boiled.
