I am not a Instant Pot devotee yet but your video has inched me closer. As a teen, my mother exposed me to pressure cookers for meal preparation, when she decided the last of five kiddos started school, it was time to take on college and still put dinner on the table.
I am really attracted to your idea of cooking in starch broth to prep the chicken for rehydrating. I am not convinced that "graveled" meats are really gram for gram that nutritious compared to their fresh base product. Especially for us seniors; all the help our digestive systems can get to extract the most nutrition out of what we consume the better.
