I was perusing some BP food sites and came across thrueat.com which has some yummy sounding stuff. One thing the site suggested wasdehydrating deli ham and deli turkey. The author did state that the end product is oily, but I' thinking that it may work in a pasta and sauce meal. Has anybody tried dehydrating deli ham? Any luck?

I'd probably cut it into small pieces, and plan on using it pretty soon, as you are right--it would be a bit oily. The thing to test would be how much soaking it needs to return to a chewable state. I dry canned chicken all the time, and I have dried chunks of home-cooked chicken, but they took too long to rehydrate.

I dry canned chicken all the time I gave up on drying canned chicken because the it never seems to come back. Freeze dried meats work better for me.

I find that canned chicken is fine--it's over-cooked and shredded (I break up all the chunks), so it rehydrates pretty quickly. When I have done it with home-cooked chicken, it never softens, at least not before I've lost patience and eaten it crunchy/chewy.
I do keep the meat separate and hydrate it by itself as a general rule, as otherwise the more sponge-like things may absorb all the water before it gets a chance. And the meat takes 15-minutes or so; that's much longer than pasta though less than brown rice.

I have dehydrated the packages of sliced deli ham, and it worked well when added to dehydrated Zatarains Red Beans & Rice. Don't remember it being excessively oily.

Dehydrating Tyson bagged chicken (like the metallic pouches tuna comes in) works out quite well.
