So, I can forget about packing food and just buy meals and sodas (beer) from the trucks on the Tonto? Great. If they stay in the parking lots, it won't do me any good, nor harm.

There's been some rumblings about this on HAZ. I think it could be better than the current cafeteria setup in terms of convenience, selection, and throughput, but it could also fall short.

Worth a try. Hard to deface a parking lot. Maybe it'll work, maybe not. Competition to the monopolistic concessionaires won't hurt

With Xanterra, its probably best to keep expectations low, but food trucks could (hopefully) prove to be a great alternative to the lackluster food-court fare at Maswik and revamping Maswik Lodge is long overdue.

The crowds at the top need feed. Coming up from Indian gardens we ate the the Rims Grocery store deli at 3, then a grenchili cheeseburger in flagstaff at 6, and then a Mexixan plate for a second dinner in Flagstaff at 9. The trash may become a problem as said previously.

I agree that trash could easily become problem. I would make it absolutely clear that keeping it from happening is the responsibility of the vendor. I know they are not directly responsible for the littering, but you're never going to be able to completely police the public with their littering. If the vendors can't keep the place clean, pull their licesnse/permits. Make this very clear up front.
