This recipe is not overly spicy, so jazz it up some with addition of Green Chiles or Jalapeño if you like.
1 pound hamburger (or ground turkey) 1 medium onion, chopped 2 cans pinto beans 1 can black beans 2 cans diced tomatoes (with green chile or jalapeño) 1 can creamed corn 1 package taco seasoning 1 package ranch salad dressing mix
At Home: Brown hamburger and onion. Drain grease and dump other stuff in with a cup or so of water. Simmer about 20 minutes. This makes a big pot of soup, so eat some for dinner (If you fry corn tortillas in 1” wide strips you don’t even need a spoon) and use the rest to fill up your dehydrator. Bag the dehydrated soup mix in zip lock freezer bags (about 1.5 cups per serving)
At Camp: Rehydrate in the field about about 1 to 1 soup mix to water ratio.

Last year, I simply focused on getting out there and back without dying. This year, I am trying new food on the trail. Can't wait to try this!

I'll offer another super easy vegetarian chili, that also dries well. I use this one on the road a lot, because you can even skip the veggie part if necessary (obviously, it's better with onion and peppers). As you'll see, it's not real precise 1 cup or so diced green or red bell pepper 1 cup or so diced onion brown those in a tablespoon or so of olive oil Add: 1 can black beans 1 can diced tomatoes 1 cup frozen corn or 1 can canned corn (yeah, not the same amount. But if you open a can, you have to use it!). 1-2 Tbsp. chili powder 1 Tbsp ground cumin a bit of pepper a pinch of salt (only if the canned goods are salt-free) Simmer a bit for optimal flavor, or dig right in if you are on the road and don't want to wait. This makes about 3 servings, so if you want to dry it, double or more. Sometimes I add a can of tomato sauce as well, for a creamier texture. If I double it, I'll use one can of each. And a bit of tomato paste can thicken it. I like it best with fresh, hot cornbread, but that's harder to manage on the trail or on the road

I have to confess, I have been terrible about not eating right on the trail. Partial laziness and also due to the fact I am a little "kitchen challenged". This one looks great though, I can't wait to try it. It's simple enough I can make it and I love chilli!
