Many years of backpacking under my belt, but now am gluten free (not by choice!). Anyone have any great ideas. Most of my previous staples are no-gos! Thanks!

Minute Multi-grain medly. It is a mix of brown rice, red rice, wild rice, and quinoa. It's not a boil in bag but a cook for 10 minute kind of thing. A certified GF product.

This list on my site might get you started for gluten-free recipes In many cases you can always swap in gf items to favorite recipes.

It's also easy to make your own minute rice, even from brown rice, by pre-cooking and then dehydrating it. For brown rice, I usually let stand in the freezer bag for 15 minutes +, or you can simmer a couple of minutes then let stand if you don't mind washing pots.
On reflection, I think that much if not most of what we eat backpacking is GF, aside from the crackers. Oatmeal for breakfast, and lots of rice and spuds at dinner. When it is pasta, I often use bean threads or rice threads, because they rehydrate well.

Dehydrate your GF pasta at home, then add in the milk powder, cheese powder, etc... to make your own Mac & Cheese. Same can be done with most any pasta dish. I like using Angel hair for the trail, because it cooks up faster.
Otherwise, foil chicken or salmon and instant mashed. Several good recipes can be found online at all recipes, but some may need to be altered for GF.
