Arkansas has some nice areas, and would probably be beautiful in May. I hiked about 50 miles of the Ouachita Trail this past winter, which was pretty fun (TR here). The Eagle Rock Loop might also be a good option. In Texas, Big Bend or the Guads would be options, but both would be crowded. You've also got the Lone Star Trail in east Texas. A lot depends on what kind of trip you want, and how far you are willing to travel. Personally, if I were planning a trip in May, I'd probably go to the Gila Wilderness in NM. Should be a great time to be there, only thing that might be iffy is the river levels, which could be high.

If you're willing to drive to NM, then you might try two areas that are near the Texas border: Gila Wlderness Sierra Blanca Peak in Lincoln National Forest
Both have very pretty Alpine like forests. The only downside to Sierra Blanca was water was a little hard to come by. There are a number of accessible seeps and springs, but they are all in steep country, with the nearest reasonably flat/level camping spots at least a half mile and often a full mile away. So you have to plan ahead and have a good sized water container to haul your water in. But we saw lots and lots of elk.

I accessed Sierra Blanca from South Fork Rio Bonito where there is plenty of water. 828 is in North Carolina - wtf?

I was out there a couple years ago, and the fire damage is absolutely devastating. The nearby Argentina Canyon/Bonito Creek area is relatively unscathed, and typically has pretty good water availability.
