what is the highest temperature rating (as in less insulation) that would be conceivably safe to use during a night on Mount everest? I'm likely to go a little over, but I'd like to keep weight and costs down.

Well, sleeping bag quality is not the place I'd be scrimping on any trip to where it gets cold. IMO, -40º would be the bag I'd trust. To get one that won't take up all your room in the pack, or be so heavy it weights you down, I spend $1000 on a Western Mountaineering Bison
This really isn't a good place to get your info on an Everest trip, but since sleeping bags can be a constant, I'll offer up this choice. Feathered Friends also makes really good bags.
the internet says night time temps during the month of May, when most people go there, is between -2º F & -23º F

Do you mean Everest Base Camp ? Nobody spends a night on top of or close to the top of Mt Everest or above camp IV (3000' below) intentionally and I am not sure about the total number but it would be a handfull that have done that (stuck up there) and survived. In fact I can only think of two . Above 8000m/ 26000' the body slowly eats itself . (it's called the death zone)
Some trivia... George Everest pronounced his surname as Eve-rest not Ever-est. Mr Everest himself did not want the mountain to bear his name and most likely never laid eyes on it.
