What are your favorite vegetarian backpacking meals? I'm planning a 9 day trip in the Sierra in August and looking for inspiration. To get the ball rolling, these are our go-to meals:
1. Brown rice, steamed vegetables (snap peas, beans, carrots, or whatever), toasted slivered almonds, soy sauce and red and black pepper. Sometimes we use brown minute rice and cook according to package directions in camp (about 1C dry rice for 2 people), other times home dehydrated brown rice (which rehydrates better with a couple of minutes of simmering). Combine rice and water and bring to a boil. Toss the veggies on top and cook everything together. Serve topped with soy sauce (1-2 takeout type packets per person), toasted slivered almonds, crushed red pepper and black pepper.
2. Rice noodles with Taste of Thai peanut sauce and veggies. Use rice noodles that need to soak in hot water for 5-10 minutes. Soak noodles in a pot or other container. In a separate container, mix 1 packet of Taste of Thai peanut sauce mix with 1 packet of dehydrated coconut milk and a little less water than the package calls for. Note that the peanut sauce mix package comes with two identical inner packets of sauce mix. 1 inner packet is enough for 2 people. Cook fresh or dehydrated veggies of your choice. Drain noodles, and mix everything together and enjoy.
3. Cincinnati style chile mac: For each person combine 3 oz of dehydrated pasta (cook and dehydrate at home, or use raman noodles), 1 small can tomato sauce, dehydrated, 1/3 can kidney beans, dehydrated, 1/3 package freeze dried corn, 1T chile powder, 1/2t oregano, 1/4t cumin, 1/8t cayenne, 1/8t cinnamon. In camp, cover with boiling water in a pot, dish or freezer bag, stir and let sit until rehydrated (~10 minutes, or so). Add 1 oz of cheddar cheese before eating (individually wrapped cheese sticks work well).
4. Idahoan mashed potatoes with veggies, cheese and salsa. Rehydrate freeze dried veggies. Add water to potatoes according to package directions. Combine potatoes, veggies, 1 oz cheddar cheese or cheese stick, and a salsa packet or dehydrated salsa. Instant mashed potatoes take up a small volume in the bear canister and take no time to rehydrate.
