A totally personal thing, not unlike shoes or other clothing.
Some people use a stuff sack with their jacket/spare clothes inside. Some blow up a platypus or hydration bladder. Some use an arm.
I sprung for a NeoAir pillow - firm, just the right height, a good texture against my cheek, not lumpy as heck.

Exped UL. I've been using Exped pillows for years, and have been happy with them.

No pillow. I use a the stuff sack from my sleeping bag, stuffed with whatever clothes I'm not wearing in my sleeping bag. Usually that starts with rain gear and insulating layers.

IMO, what you are comfortable with at home needs to be taken into account. I use a thin pillow I can scrunch up as needed. Thus, the stuff sack with spare clothing works for me. I usually put the sack into a T shirt or something that will more closely feel like a pillow case.
I can see how people who sleep on their sides, or who use a thicker pillow at home, would not be happy with an arrangement like mine. I have owned and used a few pillows in the past, but nothing seems to matter to me, so I use spare clothing.

Zeke has hit on it. I also use a scrunchy pillow, so have a mess of clothes I can arrange as needed. I generally stuff them into the leg of my fleece pants, unless it's cold and I need to wear the the pants. Then I whine. And augment the deficiencies with a water bag or something. Inflatable pillows are always too solid, but help to fill the gap at the head, since I use a 3/4 length pad (though I am thinking of replacing the old NeoAir, which leaks a little, and it looks like most no longer come in the 48" version).

Inflatable is only solid if you blow it up that way. A little squish in the mattress, a little air let out of the pillow, and plenty of comfort...

I use a combo of drybag filled with rainshell and leftover clothing, my down jacket, along with an ultralight inflatable pillow. I don't know the exact inflatable pillow because I cut off the label to force the pillow under an ounce but it looks similar to the Exped or Sea to Summit pillows.

Unfortunately I've spoiled the **** outta myself, and it's all my fault. :D I bought a Nemo Fillo Luxury pillow for using on car camping trips and (especially) for field campaigns on the Greenland ice sheet which have become a regular annual part of my job. Inflatable with a cushy layer of memory foam on top. Not light in backpacking terms at 12 oz, but oh, it's sooo comfy. And it's warm, even on well-below-zero nights. It was originally just for car camping and Greenland field work, but more and more I've been tossing it in my weekend 3-season pack, just because I can. Itssoooonice. I must be getting soft as I get old, lol. That's just me, it's my guilty "weight be damned" pleasure out there. - Mike

Made one. Took a scrap of memory foam and cut it into smaller pieces. Put those into a gallon size ziplock bag and ironed the seam shut. Poked a few holes in the bag so air could escape when I squish it down into a crevice in the pack. I use the cover off an old travel pillow for a case.
