Hey folks! Anyone have any good recommendations for some shelf stable cheeses? Maybe some meat as well (aside from jerky)? My menu is getting a bit bland, going for a 21-day hike and needed to add some variety!

Need more info. Where? When? Expected Ambient temps? 21 days w/o resupply or with resupply?
Most snausage and hard cheese will last a week if temps are mild. Go with individually wrapped things.

mini bells and other wrapped cheeses. Boars Head has some shelf stable precooked bacon. Any small salami that is wrapped will keep for many days, if kept insulated from the heat, like wrapped in with your sleeping bag. (make sure it is in a baggie to protect the bag) Then, there are pouched meats, including the pepperoni products. Some of those are too much for one meal, for me anyway, so it is best if they could be shared between fellow hikers. Tuna, chicken, Spam, all in foil pouches.

I usually carry a few ounces of good Parmesan or Romano cheese. Shelf-stable precooked bacon is one of my favorite treats. On those days when I'm over-tired or a little dehydrated or otherwise off my feed, a few strips of bacon always perk me right up.
