I love my fresh food when camping or Backpacking.
Many of my trips are in cooler weather and are not thru hikes so fresh food is usually an option.
For a small weight penalty you can enjoy some awesome meals, for the weight conscious hikers, you can eat the fresh meals first.
I have been working on pan fried meals and boil in the bag meals with no cleanup and minimal waste.
This page is a few things that I have tried out so far, some are still being tweaked.
Pepperoni, Jalapeno, Pepper, cheese omelet.
At Home.
Cook pepperoni and peppers, place in fridge to cool
In a bowl beat 2 eggs, add 2 pieces of American cheese, salt, pepper Jalapenos and peppers
Pour omelet into a vac seal bag
Vacuum seal and place back in the freezer until you leave for your trip.
This is a bit tricky, but you can fold over the bag and be quick once it starts to seal. make sure it don't suck up the egg into the chamber. You can also use a ziploc bag and force out the air by submerging in water or using your own ingenuity.
To prepare:
In a pot simmer some water drop sealed bag in simmering water about 15 minutes or so to heat through.
snip the end of the bag and squeeze out onto a roll or eat right from the bag like a burrito.
Use the water from the pot for coffee.
Cleanup:
Pack out bag
Chorizo, Peppers, tomato paste and cheese.
Chorizo Sandwich
At Home:
Cook Chorizo's and peppers
place Chorizo's tomato paste and cheese in a vacuum sealer bag (do not seal just yet)
place in the freezer for about half an hour.
remove from the freezer, vacuum seal and place back in the freezer until you leave for your trip.
Layer the peppers on top of the cheese for easy slide out with minimal mess.
To prepare:
In a pot simmer some water drop sealed bag in simmering water about 15 minutes or so to heat through.
snip the end of the bag and squeeze out onto a roll or eat right from the bag like a squeeze yogurt.
Use the water from the pot for coffee
Cleanup
Pack out bag
Cheese burger with peppers,tomato paste and mustard
At Home:
Cook Burger and peppers, cool in refrigerator 15 minutes or so
stack ingredients as shown
place in the freezer for about half an hour.
remove from the freezer, vacuum seal and place back in the freezer until you leave for your trip.
To prepare:
In a pot simmer some water drop sealed bag in simmering water about 15 minutes or so to heat through.
snip the end of the bag and squeeze out onto a roll.
Use the water from the pot for coffee.
Note, Add a slice of ham, bacon or peppers on top of the cheese to make sliding out less messy.

The next two recipes are my favorite recipes over all, that is why my Frying Pan has earned a permanent place in my cook kit with a weight penalty of 5 oz. or so it is well worth it.
Bisquick® Pepperoni Pizza Bread
This one I have been working on for awhile, I have tried all different variations, such as sauce, no sauce, sundried tomatoes, seasoning the Bisquick® with Salt, Onion powder, oregano and garlic. Adding olive oil to the Bisquick®. I am still tweaking this recipe and trying other variations
I tried sauce on this recipe as my latest tweak and I don't think the sauce is worth the extra effort but the sundried tomatoes are a great addition.
What makes this recipe so good is the pepperoni grease that the Bisquick® sucks up.
At Home:
Mix 1/4 cup of Bisquick® (depends on your frying pan size) with preferred spices in a sandwich Zip Loc
Pack a little bit of pepperoni,(needed for grease)
pack 2 string cheese packets.
(optional) sun-dried tomatoes or Tomato sauce for a topping in a ziploc.
To prepare:
Place Frying pan on the stove, very low setting, cut pepperoni, (sliced thick an quartered) and place in the frying pan, I have had best luck with chunkier pepperoni, not too thin. Do not pour off the grease this is going to soak up into the Bisquick® and knock your socks off.
Dice up 2 string cheeses and toss that in evenly.
Prep your Bisquick®, add just enough water to make a sort of putty-like, not too runny and not too thick. If its too runny, it takes longer to cook and you risk burning the pepperoni and cheese.(Practice measurements at home)
You can add a bit of olive oil to the Bisquick® (optional)
Once the cheese melts into the pepperoni, add the (optional) sun dried tomatoes.
Snip the corner of the Bisquick® bag and squeeze Bisquick® evenly on top of the cheese and pepperoni, spread the Bisquick® with a spoon or spatula.
Cover the frying pan, this helps firm up the Bisquick® more quickly reducing the risk of burning and also for a no mess flip.
Once the Bisquick® has firmed up, flip it like a pancake and cook another minute or so
Remove, top with sauce (optional) slice and serve
Cleanup:
Cleanup is extremely minimal. Using a paper towel or napkin wipe out the frying pan, place the trash in the used bag or use the paper towel as a fire-starter, pack out bag.
Note: Update, I will be trying this with a simple Quick dough on the trail.
Pre-mixed quick dough
Dry Ingredients
2 cup flour
3 tsp baking powder
1 tsp salt
Wet Ingredients
1 cups water
3 tbsps oil – for bread
English Muffin Cheesy Egg sandwich with Salami
I have tried this with pepperoni but to be honest, the pepperoni does not do it justice as much as the hard salami does.
Just a note, layering this sandwich properly makes a difference.
At Home:
In a ziploc pack a split English muffin with 2 pieces of cheese and place 4 pieces of salami in between the two cheese slices.
pack an egg in one of those small egg carriers
To prepare:
remove sandwich from the ziploc bag, prep the sandwich by opening and removing the salami.
Toss the salami in the frying pan
after the salami has cooked swish it around to make sure the grease is all over the pan.
Place the Salami on one side of the muffin on top of the cheese
crack an egg into the frying pan, flip once then break the yoke and flip back, you want to cook the yoke completely but still be moist
place the egg on the other side of the muffin opposite the salami side, close sandwich and place on the frying pan, warm for a minute, flip and repeat.
Cleanup:
Cleanup is extremely minimal. Using a paper towel or napkin wipe out the frying pan, place the trash in a used bag or use as a firestarter, pack out bag.
I have tried this with sausage and it is fantastic just make sure to cook the sausage at home.
I feel more comfortable with the salami during warmer weather but this was our canoe trip and it was pretty cold.
Roll instead of English Muffin and Sausage instead of Salami
I'll usually pack two eggs and two premade muffins for two breakfasts, if a third breakfast is needed I usually do oatmeal. I'll freeze 2 water bottles for the fresh food.
The fresh food and ice is placed in a cozy and fits inside my Gossamer Gear Gorilla no problem.
I usually bring a 19 oz. water bottle filled with milk, this is for two of my breakfasts.
The milk and ice is part of my walk in water.
This was my latest cook kit at 30 oz. [850g] including fuel.
My original goal was 24 oz. including fuel, so for 2015 I decided to lighten up a bit more, I really want to keep it at or under 24 oz. It was hard to get rid of the silicone muffin pan because I really liked the steamed muffins, but I figured I could pan fry a muffin if needed.
1000ml. Evernew Pasta Pot w/stuff sack 4.10 oz.(116g)
