Ingredients: ¾ cup butter 1 cup brown sugar 1½ cups flour 1 tsp. salt ½ tsp. baking soda 1 ½ cups oats 1 10- or 12-ounce jar raspberry preserves
Grease and flour a 13-inch x 9-inch pan. In a large bowl, cream butter and sugar. Add dry ingredients and mix well—the only effective way I’ve found is to use your hands. Sprinkle half of the mixture into the bottom the pan, and press it flat. Spread with preserves—heating up the jar first makes this much easier. Sprinkle the second half of the mix over the preserves and press lightly. Bake at 400 degrees for 18-20 minutes or until golden brown.
The morning we were to leave for the 2015 Epic Colorado Adventure, my husband e'mailed me this recipe he had found on bicycling.com. Now, you can choose to focus on the fact that he was at work and researching trail food on company time/$$ (i.e., already checked out) or you can marvel that at this late hour (with the truck packed and waiting patiently for 5:00) he found the highlight trail food of our entire trip. I put quite a lot more oats in (old fashioned, of course), cut these babies up and wrapped them individually. Never will forget sitting up there on the CDT as we left Highland Mary Lakes, devouring these little gems with a side of corn nuts......
We rationed them out over the course of about a week and a half and they held up well, including on the trail. Highly recommended.

This looks absolutely delightful- close to the same recipe we have for date bars, but I never thought of using other types of fruit in the place of dates. I suppose blueberry or blackberry preserves would work, too. Now you have my imagination going.
Can't wait to try these.

Raspberry bars are now half gone.
Can't wait to try peach preserves now. My list new possibilities is growing.

I'm tellin' you, they lasted almost the entire Epic Adventure and were a highlight of the trip. Especially good when chased out of Lost Creek by two bull moose late in the afternoon when we had no choice but Chicken Helper (without the chicken) on the tailgate of the Tacoma. Probably one of the best meals of my entire adult life.
Don't forget the Corn Nuts.

Don't forget the Corn Nuts. Instead of corn nuts I have taken a real like to munching on freeze-dried corn during the day.
