Anyone on low carb diet? If so, what do you carry with you?

I limit my carbs at home, to less than 200g per day, for my Type 2 diabetes. While in the field, I don't even try to limit them, as the exercise I get burns them up. For me, that is all that needs to happen for my medical issues. I try to get lots of fats and protein, but carbs are invaluable in adding enough bulk to make me feel full. In reality, a single serving of pasta or rice is all I would normally eat now anyway. Fats and protein in PB, mixed nuts, jerky. Just look at labels and figure out what you can eat, and what you think you can put up with for the duration of your hike. msdoolittle has made a dietary change for her own health reasons, and would be another one to ask.

We cycle our diets, mutating dieting. When we are on low/no carb diets and a a backpacking trip comes up, we don't worry about doing the low/no carb thing. We know we will be burn those suckers up.

I'm full on keto, 20g of carbs or less (sometimes going up to 50g). That said, it's been a while since I have backpacked. If I were to go out now, I found meals called Paleo Meals to Go. Be warned, they aren't cheap. Also, dehydrating your own chili and foods is helpful. Hard boiled eggs. Bacon keeps relatively well. Lots of salt. Always bring olive oil and add it to your food for a little extra fat. Cheeses Nuts Grass fed beef sticks Costco has Parmesan crisps, those would be really good to take. If you just want to stay lower carb, they sell low carb wraps. tuna Salami Pepperoni Grab some just veggies to mix with meat of your choice and you've got an insta-meal. If I come up with more, I'll be sure to post it. Just a few ideas.... Good luck!

We eat a very odd diet, due to my youngest son's food allergies.
In all honesty, the easiest way to eat for us? Meat, vegetables and fruit. I sprinkle on hemp seeds over everything.
He can't eat any nut/peanuts/most legumes and some seeds are off the menu.
So yeah, that is how we eat now, most of the time. I add in treats I make or buy for trips, but even for us, most wheat and grains is out now.

I've been doing keto for about 2 years now. It's how I've been able to lose about 130 lbs. I stay below 20g carbs daily. Trying to keep my macros at 65/35/0. I realize I'll burn plenty of calories on a full day hike. Kinda concerned about coming out of ketosis then have to get back come Monday.
I plan on purchasing a dehydrator to make my own jerky.
Reading another thread about SPAM. Never thought of it because I try to stay away from processed meats but this may be an option.

For foil packed meats, I choose tuna, salmon, and chicken.

I've also tried the Paleo Meals to Go, I wasn't that impressed, but certainly not bad. If you haven't, you should listen to last month's Backpacking Light podcast, which was about nutrition on the trail. They actually spent a fair amount of time discussing keto.
