Beef Stroganoff, Chili Mac, Spaghetti, Tasty Bites Lentil Stew w/ beef + rice tossed in. Favorite lunch is a tuna wrap with hot sauce instead of mayo.

I like 'em.I have been doing similar meals for a long time. The only one I am not fond of is Pancakes because I am just really adverse to that much work. My wife makes them and I eat them, but when I am by myself I don't.
I use a lot of freeze-dried meats and vegetables so I am just a bit different in that regard. The Thanksgiving is a favorite of mine as well. And it is soooooo easy.

Warm evenings I just go with a tuna wrap or Nutella and tortillas.
Revamping my cold evening menu after learning some guys have come down with "rhabdo" on longer duration hikes:
Salmon (packaged) bowl w/brown rice (microwave pouch cooked in water) Refried beans (dehydrated) and rice (instant) plus Cheetos Tuna and rice (instant) Instant mashed potatoes w/cheese Angel hair pasta with pesto and sun dried tomatoes (maybe substitute ramen noodles w/o flavor packet) Looking at adding polenta (yellow grits) with sausage or pepperoni if I can find some quick cook yellow grits ... getting that from Skurkas website.
Also met a German woman who fried pepperoni slices in her MSR stove pan set up and put them in a tortilla, wrapping it all up w/ cheddar inside and frying it all in the pepperoni juice.. while I ate an energy bar. Think that's a trail pizza (or cardiologists' nightmare).

Nice video, oc6088 ! Maybe I'll try some of these one day. I need to try to branch out from the store-bought meals I usually carry.

Made me think... my top 5 backpacking dinners... off the top of my head. 1. Thanksgiving on the Trail 2. Mashed potatoes and hamburger gravy 3. Beef stroganoff 4. Taco rice 5. GoBlue 'Fredo
All home-made, freezer-bag meals. I'll share recipes if anyone wants, though some (like the taco rice and often the stroganoff) vary because they are just home-made meals I dry).
