I have been eating lighter meals during the summer heat and that means fewer complex carbs which may be one reason I have been struggling on the bike.Today ,at a Caribbean takeout I tried yucca as a side and I am glad I did.Not only did this starchy root food taste great but on an internet search found it is one of the healthiest starches out there.And there are quite a few root superfoods ,such as parsnips as anyone on the now obsolete forum knows.I am going to make a point of eating more starchy root vegetables in place of grains for weight loss,digestion,nutrition and energy reasons. www.naturalnews.com/029851_cassava_superfood.html healthyeating.sfgate.com/yucca-root-nutrition-1631.html
