My wife and I are looking to get back in to backpacking this year and want to start with something relatively short (3 miles or less one way). Does anyone know of any good backpacking hikes we can do in early/mid May?

Needles District in Canyonlands National Park has done great short overnight options.

Just a caution - early-mid May is already starting to heat up in southern UT, although it can still be very good. My pick, if it's not too late to get permits, is Grand Gulch.

If you have a 4WD vehicle, Golden Cathedral is a good 1 nighter. South of Escalante off of Hole In the Rock Road. At the end of Egypt Rd. It's a bit longer than you mentioned, at 5 miles in, but it is all downhill on Day 1. Permits available at the trailhead.
