I've done the hybrid method with steel-cut oats at altitude. Worked pretty well, IMHO, but I'm an oatmeal junkie and I like just a little texture.

I haven't been by in a looooong time (sorry! life had been busy) but yes, old fashioned oats will work, but they do take longer. However, all you need to do is run your oats through the blender for a quick hit. Then you have instant oats. It's that simple! And want to make your own pre-done bags of flavored oats? Less flour needed to bind. Part of strategy for making a good flapjack, aka BOBO bar. Sometimes I'm really lazy and just indulge in a Pop-Tart (I know...) Something about the decadence when roughing it.
