I took two deer so far this season and I'm wondering if I could make venison gravel from the ground meat. It's a very lean meat so no concerns about draining off the fat. Has anybody tried making gravel?

I have zero experience with venison, but I see no reason why it wouldn’t work. Any ground meat can be cooked, broken up to fine bits, and dried.
As a side note, a lot of the FD dinners we bought in New Zealand last year featured venison!

Coworkers are constantly bringing in venison jerky. Same process, right?

I don't know why I haven't thought of this. With well trimmed venison there isn't any worry about fat going rancid. Thanks for making me think!

The gravel might be a little "gamey" but should do well with a little taco seasoning, chilli powder, etc. It would make excellent jerky.
