It just takes a little starch in the form of mashed potatoes or polenta:

Very helpful! I’m unfortunately several thousand miles away from my dehydrator, or I’d try it. I’ll try to make a note to experiment when we get home... wherever that is. I’d like to have some eggy options for breakfasts, and not freeze-dried. Mixed with potato or polenta and maybe some freeze-dried sausage bits, eggs would be a good start to the day!

Turned it off a minute in. Really? Go through that much effort to dry eggs? Guess it depends on what your time is worth and how picky one is. There are many FD egg products out there.

Well it’s been raining pretty much nonstop this week here in north Alabama so I’ve been stuck indoors. I thought I’d give this a try. I did the version using instant mash potatoes. Everything went well and it dehydrated nicely. I divided it into 3 portions and vacuum sealed them. This morning was the test. I added boiling water, some cheese and green chilies. Gave it a stir and let it sit ten minutes. It seemed to rehydrate nicely but it wasn’t very pretty. And the taste? Well, no............ not very good. I’m not a very picky eater but this got tossed. It was worth a shot but this won’t be a trail breakfast for me.
