I don't like vacuum sealing for the very reason you bring up. They make a big solid mass that won't fit into the space of a bear canister very well.

I only vacuum seal foods I want to keep for the longer term, and they are usually unsealed and repacked into meals for backpacking. I do try to squish all the air out of the freezer bags, but you’re right—those still pack together better and are never rock hard.

Another nice thing is that a zip lock that was for dinner can become a dribble tight garbage bag. There are some things, like hamburger jerky strips, that benefit from being sealed and rigid. Slows down their turning into a bag of crumbles.

I haven’t done hamburger jerky, but I have used vacuum sealing to keep cookies from being too crumbled (also keeps them fresh longer, an important factor with home-baked goods).

I don't know how many people have this but Foodsavers with an accessories port can use them. There is both a wide and normal mouth version. This obviously isn't for the trail. Sealing in mason jars removes most of the air but doesn't crush things like sealing in the bags do. Great for things like long term storage of rice or flour. No oxygen no bugs.

I use a dehydrator. Definitely need one with temperature control as different foods need lower temps than others. My old dehydrator kept getting hotter and hotter as it worked so the food tasted scorched. Yuk! I do chili and pasta sauce (with meat) for most of my bp trips.
