And then there's the Corn Chowder. This one really makes almost 2 cups--add maybe 1 1/2 cups of water.
1/2 cup freeze-dried corn 1/3 cup NIDO (whole milk powder) 2 Tbs dried veggie mix: onion, mushrooms, carrot gratings, etc. 1 tsp chicken or veggie bouillon a pinch of garlic powder
This one is a hearty soup that could be used to fill out a skimpy dinner, or, if you make this much for each person and maybe add some chicken, would make a meal in itself.

I've found those cups of dehydrated soups they have in the store (just add boiling water) handy. I find most of them to taste like salt and styrofoam :D The one exception are the Doc MacDougall's brand. They taste like what they are. I like the split pea and the black bean/lime but they are all very good. I'll pick them up at Whole Foods along with Doctor Kracker brand seed crackers to go with my goat cheese.

A late evening snack I have nearly every night, during the winter. (It rarely gets above +10C / 50F in my cabin during the winter, so a late evening warm-me-up is crucial for a good night's sleep.)
Anyhoo, It's a pretty simple recipe, and one that I've also begun using while backpacking / camping.
A nickel's worth of spaghettini (cooks faster than spaghetti), broken up into 1" to 2" lengths. However much chicken or beef bouillon powder you want. (heaping tablespoon for me.) A few dashes of some onion powder. Boil it up in a little more water than fits into a cup of your choice. By the time it's cooked, (in a few minutes) the excess water will have steamed away, and you're left with a perfect cup of chicken or beef noodle soup.
