They might even think it is bad for others, but they feel that it shouldn't apply to themselves because they know what they are doing. PCT thru hikers? Or politicians?

The PCTA is trying to discourage the use of alcohol stoves in southern and central California. But as you know, it is sometimes difficult to change a person's way of thinking about stuff like this. Not surprising when you are dealing with people who are counting every gram. I can see the point in areas like that, and if I do any backpacking in places where there are thing to burn, I'll consider switching to the canister. I don't feel that it's a very big risk when in the alpine, with nothing but granite around.

Along popular trails, such as the PCT, in high-use areas, and in tinderboxes like CA, fires are a bad idea (if they're permitted at all) but there are still plenty of areas in the west where a small fire has minimal impact and very low risk.

Nutrition is important when on the trail. You're burning many more calories while hiking. A balance of proteins, carbs, and hydration are important. Your idea of canned foods and salad are a great combo to take care of both issues.
...In regards to cooking - a blow torch and a gallon of fuel will simmer most marshmallows to just the right point of perfection. To be safe, bring a raft and take your cooking items out to the middle of a lake and cook there. It will solve several issues at the same time. Enjoy your S'Mores...

If you like salads, Outdoor Herbivore has some of the tastiest backpacking meals I have ever had; and no stove required. Check out Hop Pea Slop, Sunny Salad, and the Pesto. I never tire of them.
I use a small canister stove because it is fool-proof, easy and quick. I am too lazy to bother with something complicated. I have the cheap Chinese Pocket Rocket knock off ($9 Amazon)and it works great. I just boil water in my GSI halulite kettle and pour it into a ziplock or prepared meal bag.
