Olympic National Park may be a possibility. I hadn't thought about that: June could be a really lovely time to do the ocean shore--it might even be relatively rain-free. And there really isn't all that much seasonal difference in the Hoh rainforest. You could possibly even be able to climb all the way up to the glaciers in June, depending on the snow conditions. (The Quinalt is a different story: you have to ford the river.) There are some areas in the rainshadow side of the mountains that might open up in June for dayhikes or overnighters, but it'd be tough to put together a longer trip.

With all due respect to Jazzmom even with higher elevation the Muley Twists at Capitol Reef could be HOT the first week of May. I've been to the Needles in Canyonlands the second week of April and it has been in the mid 80s and HOT out of the wind on the slickrock. Unless you can go on the fly with a cooler weather forecast I would not target the Colorado Plateau beyond April or before the end of September if not into October. I defer to your experience on this. My limited experience in the first half of May in the Southwest have been pretty much *perfect* at 4-5K elevations and higher. No doubt it can be hot and I've probably been super lucky.

It varies a lot. I've been through Grand Gulch a couple times in May and mostly had pleasant temps, but also some tough slogging through baking canyons.

Smokies. Sheltowee Trail in Kentucky. Ozarks. Maybe something in the Black Hills? It’s a little early for Isle Royale-technically the island is open, but north side bays may still be iced over and there will be patchy snow, and then the black flies start........

Depending on conditions and bugs I've done the Pemi Loop in NH's White Mountains Memorial Day Weekend. Also point to pointing Glencliff to Franconia Notch or further MIGHT be awesome. On that route Moosilaukee is my favorite summit out East and the Franconia ridge is of course world famous. The Kinsmans aren't half bad either.
