I think I had some blueberry ice cream when I was growing up. Somehow salmon and ice cream just don't seem palatable.

I bought a bottle of blueberry hot sauce when I was in Maine once. Delicious over vanilla ice cream.
I am intrigued by this salmon flavor. I don't know if i have come across a way of eating it that I don't love salmon.

I'd try it. The worst that could happen is that I don't like it. I wouldn't say that I'm an adventurous eater, as I tend to draw the line at things like spiders and grasshoppers, but I've had lamb brain (very good, in a high class restaurant), cracklins (love 'em!), and a salmon/blueberry/butter entree that was very nice indeed.
I've heard that garlic ice cream tastes surprisingly good. I'm sure that there are multiple versions/recipes, with other non-standard ingredients as well, but why not give it a shot? As someone who grows garlic, I'd try that, too.
But okra ice cream?. No. Uh-uh. Okra are the seed pods of invasive aliens.

Garlic ice cream I've had at the Gilroy garlic festival. The salmon reminds me of an Aleut chewing on frozen seal blubber. Never know until you try, though.

How much different is poached salmon with Hollandaise sauce beyond temperature?

I'd try it.
A couple years ago, I had a goat-cheese, habanero, marionberry ice cream cone.....it was delicious.
I don't know if there is any item made from smoked salmon that wouldn't be good.
