It's funny--HYOH and all...
I'm a serious cook at home--I've always been the every-day cook in our household, and I have some legit chops and enjoy preparing excellent meals when there is time. I guess I'm kind of a "foodie."
But when BPing, it's strictly utilitarian for me--no desserts, no cooking (everything is no-cook or boiling water only), etc.

I guess I'm kind of a "foodie." But when BPing, it's strictly utilitarian for me--no desserts, no cooking (everything is no-cook or boiling water only), etc. I pretty much stick with “Just add water” in camp, but I’m happy to put in a lot of work at home to make those trail meals good. But no fancy cooking—those brownies are about as complex as it gets. I like my desserts, though, and on the trail is one of the few places I can get away with eating them every night.

Typically I'll bake some brownies before a trip and take a few generous portions to be my dessert. They can take a beating while in the pack and also go great if I have an after dinner sip of whiskey or wine.

Instant pudding, many flavors available. Just figure out at home how much water and how much powdered milk. To make it really quick and easy on the trail, do your prep by marking a Ziplock bag with a line to show how much water to add, and also run your powdered milk, after measuring it, through a blender to break it into finer particles that dissolve easily. In camp, dump the powdered milk and the pudding mix into the Ziplock bag, add water to the line, seal the bag, then shake and knead until all the lumps are gone and the pudding is uniform.

I have been using whole powdered milk that I buy on Amazon. I haven't checked lately but it seems my local stores only stocked fat free powdered milk. The whole milk is tastier and seems to work better in recipes including when making instant pudding. I tried rebeccad's brownie recipe. I am on the fence as to whether to regard it as brownie or fudge. It is very rich and chocolatey. My 7 years old twins had fun making it. Since it only saves 4 oz in water weight I might bring fully cooked brownies instead since I will only do short trips for the foreseeable future. But if you wanted a very rich dessert freshly made later in a long trip they would be very good.

ErnieW, look for Nido in a yellow can next to the other powdered milk products. Found in many grocers.

Mountain House Apple Crisp and Raspberry Crumble are surprisingly good and require little effort. I don't usually carry a dessert, but Mrs. big_load likes a treat in camp once in a while.

I just put the pudding mix and powdered milk (Nido, usually, for a richer and tastier pudding) into the ziplock and mark with how much water to add. it’s best if you have a snowbank or icy stream to chill it, but is perfectly good a bit runny and warm if that’s what you can manage!

We usually have fresh cookies for a night or two then switch to some of the things I’ve discussed here. We do a lot of trips over 4 nights, so need those things!

My favorite is simply slices of dried mango or dried apricots. These are my go to deserts. Another odd on from my Army days was a pouch of hot chocolate mix (with the little marshmallows) in a bag. Mix in about 3 ounces of water then add a crushed graham cracker to the mix and munch. It is a sort of pudding I suppose.

Some friends turned me on to Backpacker's Pantry Creme Brulee. Pretty good IMO.
