Here is another good tasting and filling dinner for the trail that is also freezer bag cooked and easy to make. I use Sante Fe Refried Beans as the base. I prefer the Fire Roasted Chipotle Refried Beans, but you can use one of the others and add the seasoning as you like. I then add FD Bell Peppers, FD Cheddar or Jack Cheese, FD onions, and sometimes instant rice. I also use FD beef crumbles with this. Sometimes I add it in with the rest of the mix and sometimes I hydrate it separately, depending on different circumstances. If you add it in with the rest of the stuff you have to allow extra time for it to rehydrate. I then add the Crispy Jalapenos at the last minute and serve it on a tortilla or have it "naked", i.e. with out tortilla. I also have packets of salsa to add over the top. This all hydrates well and is a nice trail dinner. The ground beef and cheese add LOTS of calories (fat and protein) as well as flavor. All these ingredients are easily available online. I highly suggest starting your backpackers pantry to easily and relatively inexpensively assemble tasty meals for your backcountry adventures. Rumi

A staple for us is similar, but made in our dehydrator. 2 cans of refrieds, a can of Hatch chiles diced , onions, jack and cheddar cheese shredded, salsa of choice, cilantro, lean chopped meat or chicken. This makes enough for 9 burritos or 3 meals for us on the trail. I'm approximately twice the size of my wife. :D

I am particularly interested in dehydrating cheese right now.

I am particularly interested in dehydrating cheese right now. All for one and one for all! Single freezer bag. There's a caveat, though. Cheese is high fat, so we stick the finished product in the freezer and consume within 10 or so days from pulling them out of there. Ernie, I don't know that we'd get sick or it would taste bad, we're just being cautious. The finished product doesn't feel slimy or seem to have much moisture content at all. We never go longer than 7 days on trail, so that criteria is easy to maintain. Besides, it only has to last as long as unrefrigerated tortillas. As a bonus, the extra tortillas went for great lunches of almond butter with dried bananas and strawberries. Tasty! I bet if we vacuum packed it'd last far longer. I've seen lots of instructions for dehydrating cheese, but I don't think it'll rehydrate into the same texture. By mixing and melting it into the beans , it adds the flavor and smoothness, but not the blanket of gooey goodness you would get melting it fresh. The burritos we had on the trail last week were as good as ones we ordered in NM after getting off the trail. Good luck with your efforts, and please share your results. Edit: I just recalled having a Packit Gourmet product called Texas State Fair Chile, and it had a packet of freeze dried cheese to put on it. It wasn't like real cheese, but it did add taste and was better than being completely mixed in.

I am particularly interested in dehydrating cheese right now. I like to use FD cheese. I usually get Emergency Essentials Cheddar in a #10 can containing 2 pounds of FD cheese, waiting till it is on sale to buy. They also have mozzarella, Monterey jack, and colby. It rehydrates well. I don't like the cheese powders as they are a huge mix of processed stuff. There are several companies online that sell FD cheeses. Walmart usually has it in the store. Rumi

My twins love Smartfood white cheddar popcorn. I hate paying for it though. So I bought this: www.amazon.com/gp/product/B011J3KDGC/ref=ppx_yo_dt_b_asin_title_o00_s00?ie=UTF8&th=1A light drizzle of butter, some cheese powder and I have home made white cheddar popcorn. Anyway, they also make a standard cheddar powder as well. The nice thing about them is that they are shelf stable. I am going to try doing some trail food with the white since I have a jar of it. they will do cheese flavor but not the satiation of cheese fat. When I get to it I am going to try dehydrating some shredded cheddar.

Our Scout troop usually buys from the grocery store, so very few FD or dehydrated items. This is from their cookbook.
Frito Burritos
1 cup dried refried beans 10-12 flour tortillas grated cheese hot sauce/salsa 1 head lettuce 2 cups water Frito Corn chips
Mix the water and dried beans into a paste, heat and fill the tortillas with fixings. Crunch and munch. serves 6

I just finished a batch in the dehydrator. 1 pack Vego Mexican Rice, cooked per package directions, 1 can vegan refried beans, 1/2 jar salsa of choice. Stir together, dehydrate, pack in 4 portions. In camp, add boiling water to barely cover, let sit in cozy, spoon onto tortilla, add hot sauce to taste, wrap and eat. Makes about 8 burritos or 4 meals worth for me. Carnivores could add meat of choice, cheese while assembling in camp.

I also dehydrate my own, but I never follow a recipe. Black and kidney beans, stewed tomatoes, various colored bell peppers, etc. And I usually add other dehydrated veggies to almost every meal like spinach, broccoli, mushrooms, carrots, etc. Chopped fine so the disappear into any recipe but boost the nutrient profile of my meals. FBC in camp.
Another nice thing is that large (burrito-size) flour tortillas are a perfect fit for the diameter of a bear canister (at least the Bearikade I own now and the Bear Vault I used to own). They sit flat on the bottom for a very space-economical fit. They are my "bread" of choice on the trail for all meals.
