I just set 3 pounds of Birdseye frozen Thai stir fry veggies in my Nelson dehydrator for the night. The dried product will be repacked in half cup portion packs to supplement soups and one pot meals for bulk and nutrition. One portion of these veggies + dried curry paste + some dried protein like beef chicken tofu + coconut milk powder over Minute Brown Rice really packs a punch for a days end meal. I will use fresh vegetables some times, but blanch them 30-60 seconds in boiling water before setting in a dryer. Same prep as greeting the veggies ready for freezing. I blanch at spending $5 a pop for a few once’s of packaged dried or odd textured freeze dried veggies. When raising a family with a large garden, I spent a lot of time canning, drying and freezing food. I still old Rodale preserving food books from the 60’s for food preservation as guides though single now. I use Dicentra’s ONE POT WONDERS and Sarbar’s early FB Cooking books still for inspiration.
