So, I just completed my third Meatless Monday. Really though, I didn't start because of the fad. But, it did get me to thinking. On any given Monday breakfast is in two parts. At the house before heading out for work I have a handful of almonds. This to get something on my stomach before taking my cholesterol medicine and fish oil.Then at work I have either a whole wheat poptart style pastry from Trader Joes or a Kind breakfast bar. Twice a week I have a peanut butter and jam sandwich for lunch. That's already two of the three daily meals that don't have meat. Making a meatless dinner is easy. What I do on occasion is make a batch of brown rice. I saute some onions and mushrooms, add some of the rice and open a can of organic pinto beans and heat all that up. I'll add several dashes of Worcestershire sauce and have that for dinner. For lunch the next day, I'll chop up some grilled chicken, add it to the rice and beans and take that. I'm still alive and healthy.
Is anyone else doing or have considered doing the meatless thing?

We do meatless dinners once in awhile. I tried to make it a one a week thing, but I haven't been good at sticking to it. I'm fortunate enough to have kids that like vegetables, with one eating pretty much every vegetable I make, so making it a regular thing wouldn't be too difficult. They'd probably prefer it to all the fish we eat.

While I would not call my parents devote Catholics, both sets of grandparents were devote and instilled old school Catholic traditions into my parents. Growing up we always had meatless Friday dinners - usually fish - but sometimes other stuff.

I could, but don't. Rice, grains, and pasta are on my "limited" list. I'd have to give up the bacon I eat daily, and find something for dinner. Not too terribly difficult, but more work since I am limiting carbs.

If my faith required it I would abstain from eating meat on Mondays, but that is highly unlikely because the Church of the Flying Spaghetti Monster features meatballs.
As a matter of fact, I indulged in that communion last night.

I've been what is called a weekday vegetarian for 10 years. I eat nothing with a face during the week. On weekends I still don't eat junk food but I will eat a salmon steak or a piece of chicken.

I eat a plant-based diet (vegetables/fruit/quality whole starches/beans/rice). No dairy. No "junk food." I try to eat food as close to its original form as possible (whole food). I will have a piece of fish perhaps once a week, and have no problem changing my diet on holidays where it can be problematic to eat. Meat from hunting is given to friends and family.
You can eat Twinkies and drink Mountain Dew and call yourself a "Vegan." Most Vegan's I've met have just substituted animal fats for other, even less healthy fats and many would be better off not being "Vegan."

That’s called the “chip-tarian” diet, though salsa and bean dip are pretty veggie I guess. A woman showed me a refried bean dish (cook beans a bit first) with guacamole or sliced avocados on top, then cubed fresh tomatoes and salsa/seasoning to taste. 3-layer dip I’m guessing would cut down on the chips ... could use corn tortillas too. munched.

Since there is so much controversy over foods being unhealthy in one way or another maybe just not eating is the way to live forever.

We have a good friend who owns and is a chef of a Vegan Restaurant in Costa Rico and posts photos of foods. My husband likes to say "doesn't that look delightful?". Well, yes, if you want to blow your carb count for the day.

I tried a 'Beyond Meat' burger yesterday. Does that count?
My impression: meh. I didn't dislike it, but probably would not order it again if I had a choice. Definitely had a different flavor, like a lower price/lower quality lean ground beef.

I've been an ovo-lacto vegetarian (eggs and dairy are fine, but no animal tissue) for 15 years or so.
Back then, my wife decided she was going vegetarian, and I already didn't eat many kinds of meat, so I figured it would be an easy change for me. A couple of years later, wife added meat back to her diet, but by then, there was no going back for me.
I'm so far gone now that I tried one of those Impossible Burgers in a restaurant, but hated it because it too closely resembled beef.
Just to throw it out there: A lot of people confuse vegans/vegetarians with preachy animal rights advocates. Most of the preachy animal rights advocates are vegans, but not all vegans/vegetarians are preachy animal rights advocates. Most of us don't care what all meat stuff that other people eat so long as we don't have to eat it.

I don't have an issue with vegetarians and vegans, thought I will raise my eyebrows at "vegans" who won't eat meat because it's cruel, but have on thigh-high leather boots.....
I do find it amusing when people eat veggie burgers that "taste just like real burgers". I mean, if you find killing animals repulsive, why would you eat something that emulates something you find repulsive?
But hey, HYOH.
